Kahlua

Take two Bottles of Russian Spirit1, the Bottles being each of a just quantity of one-fifth withal and soke therein two Pounds of Beans of the coffee Plant.
Let it sit, in a covered vessel of glazed earth or of crystal (wherefore you may observe the Progress of the liquer) in a dark place but bringing it in at night or the Faeries may get at it2. Begin this at a full moon so you may count the Nights.
Upon the Return of the Moon, mark it two fortnights3 and not less, take you some good clean cloth and drain the beans over a bowl until they have yielded their juice4. This may take a while5.
After the beans are well-drained, take some blotting paper and fold it around6. Pour the juice through the paper again, into another, clean jug or bowl and do this again until the juice is perfectly clear. It will be very dark.
Then take some sugar, in grains and measure out a cup and half again and then two Spoons, large7 and take this to the Hearth, and over it pour water of the same quantity from the kettle and boiling. Stir it well until it is clear and thick. Then add this sirup to the juice of the beans, and stir well with a Wooden Spoon or stick if you have none. Then add almost a Spoon8 of the extract of vanilla and you are done. Then put it in a bottle and stop it well. It will keep forever9.
